INTRODUCTION:

Sulphurdioxide(SO2)isusedwidelyasanadditiveinvariousforms,most
commonlyassulphites(orsulfites),inthewine,beverageandfoodindustries
whereitactsprimarilyasanantimicrobialandantioxidantpreservative.
Duringwinemaking,sulphitesareusedasanessentialadditive,usually
atpost-malolacticfermentation,inthecontrolofcontaminationby
Brettanomycesduringageingandtoalsoprotectthewineagainst
detrimental“oxidativeandenzymaticbrowning”.SO2isonlyactive
asanantimicrobialandantioxidantpreservativeintheunbound
“free”form.GiventhatSO2becomes“inactive”whenitbindsthe
colourpigmentsofwine,andwithlegalrestrictionsonSO2levelsin
wine,ithasbecomevaluabletowineproducerstomeasureboththe
FreeSO2andTotalSO2.Inadditiontothis,duetotheincreased
awarenessoftheadverseeffectsofsulphitesandtheprevalence
ofsulphiteintoleranceinsomeindividuals,sulphitelevelsinfoods
anddrinksarestrictlyregulatedbyvariousgoverningbodiesand
thereforethereisarequirementforaccuratedeterminationofthe
levelofsulphitesinfoods,beveragesandwines.
